When I was struggling to come up with ideas of what to cook for dinner, my grandmother taught me a recipe over the phone.

This is chicken thigh seasoned with salt and pepper, coated with starch and put in boiled water. This went amazingly well with ponzu sauce!  My grandmother’s tip was to place the cooked chicken into ice water for a few minutes right after taking out from boiling water. She said that this would help consolidate the starch, making it less sticky, but rather, slippery.

I also made another eggplant dish this week.

Different from last week, I stir-fried eggplant, pork and cabbage with oyster sauce. I made this dish without following a recipe – I believe I have become better at doing this! It may have been better if I added more oyster sauce, because I found the taste slightly weak. Next week, I will try remembering to taste while cooking more frequently.
