Healthy Living NYAA Reflection – Muffins (March 15)

Today I had a few friends over and we decided to make chocolate chip muffins.

We used this recipe that was originally for cookies for this muffin instead. These are the results.

With all this baking i’ve been doing recently, I feel like I am getting the hang of the process such as mixing dry and wet ingredients separately before you combine etc. and the taste of the cupcakes were nice as well!

Everyone in the world is being affected by coronavirus in several ways. I thought it would be good to reflect on CAS using the following questions to discuss how the coronavirus has effected our ability to participate in creativity, activity and service as students.

  • How have you been engaged in service and activities when you have been unable to go to school or clubs?
  • How have you focused on your wellbeing?
  • What have you learned about yourself in 2020? What have you been most proud of? Is there anything that has surprised you about yourself?

Today I decided to make eggless banana bread – a nice, healthy and tasty option if you feel the urge to bake.

 

The recipe I used was from theworktop.com and it follows like so:

Here was the finished product: (I added some chocolate chips)

 

It was a little dense due to not being eggless and wheat flour I added but it had a nice flavour. I learnt that baking with coconut oils means that you cannot store the goods for too long.
